Drew&Cole Clever Bake

Why do I have to add ingredients in a specific order?

Adding the ingredients in order (Liquids, Sugar and Salt, Flour, Yeast) allows Clever Bake to mix the dough as efficiently as possible. It also ensures the yeast does not combine with any liquid before the rough has begun to mix, which is essential especially when using the delay timer.

Can I use hot/cold liquids?

No, it’s recommended to use room temperature liquids for best results. Remove milk or other liquids from the fridge and allow to reach room temperature before baking.

Can I wash the baking pan in the dishwasher?

The baking pan and kneading paddle must be washed by hand. We recommend using a soft sponge not a scouring pad during cleaning.

Why did the dough not mix properly?

If the dough is not mixing correctly, ensure the kneading paddle is correctly installed on the shaft. It is also possible the mixture is too heavy or too dry, or the ingredients have been added in the wrong order. Always ensure your ingredients are measured out as accurately as possible.

Why did my bread rise but then collapse?

The bread may have risen too much. To reduce the rate of rising, reduce the amount of yeast and/or increase the amount of salt.

Can I premix the yeast with water?

No, the yeast needs to be dry and must be the last thing added to the baking pan, on top of the flour. This is crucial when the delay timer is being used.

Why is there a hole in the bottom of the loaf?

This is created by the kneading paddle and is normal with all bread makers. If the hole seems larger than normal, it may be because the dough has rested to one side of the blade after the second kneading cycle. This is also normal with bread makers. You could position the dough evenly in the base of the pan before baking.

The kneading paddle is stuck in my loaf, what do I do?

Clever Bake comes with a dough hook to help remove the kneading paddle if it doesn't come out when removing the bread from the pan. If the dough hook is lost, any small utensil can be used. We recommend allowing the bread to cool for at least 20 minutes before removing the paddle.

Troubleshooting

Problem

Possible Cause

Solution

Odour or burning smell

Ingredients spilled into baking chamber.

Stop the machine and allow it to cool completely. Wipe the chamber clean with a dry paper towel.

Ingredients not mixing / motor sounds strained

1: Kneading paddle not installed correctly.

1: Ensure paddle is fully fitted on to the shaft.

2: Too many ingredients.

2: Measure ingredients accurately.

HHH display error

Internal temperature too high.

Unplug and open lid. Remove bread pan and allow to cool for 15-30 minutes.

Viewing window is cloudy

Normal condensation during mixing/rising.

This will clear during baking. Clean window between uses.

Kneading paddle stuck in bread

Normal occurrence, especially with darker crusts.

This is normal. Allow loaf to cool, then remove the paddle using the dough hook or untensil.

Ingredients not fully blended/flour on sides

1: Incorrect installation

1: Check pan and paddle are secure

2: Too much flour

2: Ensure measurements are accurate

3: Gluten-free dough is wetter

3: Scrape side with spatula if needed

Bread rises too much/lifts lid

1: Too much yeast

1: Reduce yeast slightly (1/4 tsp)

2: Missing salt

2: Ensure salt is added

3: Incorrect measurements

3: Measure carefully

Bread doesn’t rise

1: Old/inactive yeast

1: Check expiry dates

2: Incorrect measurements

2: Ensure measurements are accurate

3: Cold ingredients

3: Use room temperature liquids

Sunken/cratered top

1: Too much yeast or water

1: Reduce liquid or yeast

2: Dough rose too quickly

2: Do not open lid during baking

Crust too light

Lid opened during baking

Keep lid closed. Use darker crust setting.

Crust too dark

Too much sugar

Reduce sugar slightly. Use lighter crust setting.

Lopsided loaf

1: Too much liquid/yeast

1: Adjust measurements.

2: Paddle pushing dough unevenly

2: Some variation is normal.

Different loaf shapes

Recipe variation (e.g. wholegrain)

This is normal.

Hollow or holey bread

1: Too much liquid or yeast.

1: Adjust measurements.

2: Water too hot.

2: Use room-temperature water.

Undercooked or sticky bread

1: Too much liquid.

1: Reduce liquid.

2: Wrong program.

2: Ensure correct setting is used.

Bread collapses when slicing

Bread too hot before slicing

Allow bread to cool for 15-30 minutes before slicing.

Dense/heavy texture

1: Too much flour.

Adjust ratios. Please note that wholegrain bread is naturally denser.

2: Not enough liquid.
